The Perfect Side

Ingredients
Serves 6-8
Spicy Feta
4 ounces olive oil
½ teaspoon chopped garlic
¼ teaspoon crushed red pepper
½ teaspoon chopped fresh oregano
½ teaspoon chopped fresh parsley
2 tablespoons chopped fresh basil
⅛ teaspoon black pepper
5 ounces feta, cut into ½-inch cubes
Broccoli and Cauliflower
4 ounces olive oil
12 ounces broccoli crowns
18 ounces cauliflower crowns
1½ teaspoons salt
¼ teaspoon black pepper
1 tablespoon chopped fresh oregano
2 tablespoons sliced garlic
Juice of one lemon
METHOD:
Spicy Feta
Heat olive oil in medium sauté pan over high heat to smoking point. Add chopped garlic and sauté until light brown. Add crushed red pepper and stir to release flavor. Remove from heat; stir in oregano, parsley, basil, and pepper. Transfer to medium bowl to cool. When cool, add feta; mix well and set aside.
Broccoli and Cauliflower
Preheat oven to 400°. Heat olive oil in 12-inch oven-proof sauté pan over medium-high heat to smoking point. Add broccoli and cauliflower crowns and sauté until light brown on one side. Add salt, pepper, oregano, and sliced garlic. Stir well and transfer pan to preheated oven.
Roast until tender, 8-10 minutes, stirring twice.
Squeeze lemon juice over broccoli and cauliflower and toss. Add 4-6 tablespoons oil from spicy feta and toss. Transfer to platter, garnish with half the spicy feta, and serve.
